HISTORY:

Aldo Pavesi: Master Oven Builder

Aldo Pavesi, b. 1946 in Modena, Italy, is the master oven builder responsible for the world renown of the Pavesi Brand. Aldo studied as a refractory engineer for the ceramic goods industry, designing the refractory ovens to bake ceramic household products. These years spent perfecting different refractory recipes and dome shapes provided Pavesi a deep understanding of the unique properties of refractory material components.
Aldo founded Pavesi Forni SRL in 1969, with the development of the single piece refractory baking floor. To this day, no other oven company has been able to successfully replicate this feat, which provides incredibly even heat transfer across the floor and reduces cracking. His belief in his product is so firm that Pavesi continues to offer a 10 year warranty on the refractory material of his ovens.
Although Aldo Pavesi continues to oversee production, his children, Alessandro and Elena, have joined him in their successful family business, preserving the secret refractory recipe that sets the standard for wood fired ovens.

Built in Modena

Each and every Pavesi oven continues to be built in Pavesi’s facility in Modena, Italy. Ovens begin their life in the daily mixing of the signature refractory recipe, which is poured into specially designed molds. These molds form the refractory brick which makes up each Pavesi oven. The molds remain stored on the shelves of the Pavesi facility, where they slowly cure over the space of a month.

After curing, the refractory parts are removed from their molds and assembled with other oven components for shipping to the Forza Forni facility in the USA. Ovens remain stored in the Forza Forni facility until purchased, when they are either built on site or built within the Forza Forni production center for shipping. The final curing process prepares the oven for regular baking.

Peter de Jong is the founder and CEO of Forza Forni. With decades of experience in the commercial cooking industry, and nearly 15 years specialized in commercial brick ovens, Peter is one of the foremost Italian brick oven experts in North America.

Operations - Metal Fabrication

Eliu Patrocinío has over 12 years of professional welding experience and 5 years of restaurant management in the New York area. Eliu graduated at the top of his class and now manages the metal fabrication department for oven customization at Forza Forni.

Rick Figueiredo

General Manager

Ricardo Figueiredo operates as the company’s General Manager. Rick has a background in office administration, sales management and legal works. He holds a Business Administration Bachelors Degree (B.B.A.), specializing in Business Law.

John de Jong

Chief - Production

John manages operations for our oven construction teams and general operations. Grounded in an extensive background in dough production and classical pastry education from the Netherlands, John has spent years perfecting his intricate understanding of wood fired oven baking and construction.
